Miso Salmon Soba Bowl

There are many different recipes for "miso salmon," and I don't know if there's an official way to make it. This is just how I cook mine. 
The quickest way to cook fish is to pan-fry it. I like to bake and broil and grill fish but all that requires pre-heating stuff -- steps I don't quite have time to do when I make my meal during the workday. This takes about 10 minutes, including prep. 
Pre-heat pan on medium-low heat. 
Combine with tbsp mayonnaise, 1/2 tsp miso and some lemon juice. This is good for two salmon steaks. 
Spoon some of the mayo mixture on the pan. Set your salmon steaks on top of the mayo mixture, then lather more on top. Cover and cook covered on medium-low heat for three minutes or so, depending on how thick your salmon steaks are. Turn over, and cook for another couple minutes or so or to however done you like your salmon. I like mine pretty rare. 
Soba noodles are also really quick to cook. Boil some water and add the noodles. Turn off heat and as soon as the noodles start to flex remove from heat. This happens very quickly, like in less than a minute. If you leave it there any longer than that you'll have mushy noodles. I like to add a very tiny amount of sesame oil but that's it. 
Microgreens are very tasty, they don't really need anything.

Miso/Citrus Salad with Baked Salmon and Watermelon


The salmon in this salad is baked in a foil, topped with mayo, lemon, chopped red onion, and a sprinkle of brown sugar. Baked it tented with foil at 350 until the salmon was flaky.

The greens: pea shoots, sunflower shoots, romaine lettuce. 
The dressing: half a teaspoon of miso, lemon, and some olive oil.
I put watermelon cubes on the plate for color. :)
